Ingredients

  • 225 g chickpeas (about one can drained and rinsed)
  • 1 can diced tomatoes
  • 1 cup oat milk
  • 1 whole yellow onion chopped
  • 2 cloves garlic minced
  • 1 tablespoon olive oil for cooking onions and garlic
  • 1 tablespoon curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish optional
  • Rice or naan bread to serve with optional

Instructions

  • Heat the olive oil in a large pan over medium heat. Add the onion and sauté until it’s translucent, which should take about 5 minutes.
  • Add the minced garlic and sauté for another minute.
  • Stir in the curry powder, turmeric, and cumin. Cook for a minute to let the spices become fragrant.
  • Add the drained chickpeas and diced tomatoes to the pan. Stir everything together so the chickpeas and tomatoes are well coated with the spices.
  • Pour in the oat milk and stir. Bring the mixture to a simmer.
  • Let the curry simmer for about 15-20 minutes. This allows the flavors to meld together. If you’d like a thicker curry, you can simmer it for longer.
  • Season with salt and pepper to your liking.
  • Serve the curry over rice or with naan bread if you’d like, and garnish with fresh cilantro.

Rating: 3 out of 5.

If I had naan or rice, it would have been better–my fault! Secondly, I more prefer when recipes give you an exact salt amount rather than “to taste” because I woefully under-salt. If the salt had been on point, this would be 4 stars at least! It’s got a light curry flavor and is nice and creamy if you use the right oat milk.
