Ingredients

  • 4 slices slices of bread whole grain
  • 1 cup almond milk unsweetened
  • 2 tbsp chickpea flour
  • 1 tsp paprika smoked
  • 2 tbsp olive oil
  • 113 g tempeh diced
  • 1 whole avocado diced
  • salt, pepper, other toppings to taste

Instructions

  • In a large bowl, whisk together the almond milk, chickpea flour, smoked paprika, salt, and pepper.
  • Dip each slice of bread in the mixture, allowing it to soak for 1-2 minutes on each side.
  • In a large pan, heat the olive oil over medium-high heat.
  • Add the tempeh to the pan and cook for 3-4 minutes, or until it is crispy and browned.
  • Remove the tempeh from the pan and set aside.
  • Add the soaked bread to the pan and cook for 3-4 minutes on each side, or until it is crispy and golden brown.

I came into this not expecting much, possibly a one-star review. I am surprisingly and happily impressed! The spices may need tweaked (some onion and/or garlic powder?) but it’s a very good start. I didn’t want to waste my good bread on this in case it was bad, so I used whole wheat white basic bread.

I’d say that if I used really good bread it would have scored higher.
